Cavatappi Pasta And Broccoli 

Cavatappi is a type of corkscrew-shaped pasta, resembling a wine corkscrew. Like most pasta, it is typically made from durum wheat, but gluten-free versions are also available. One brand I particularly enjoy is Banza, which is made from chickpeas. This pasta cooks fairly quickly—in just 7 minutes—and can be paired with a variety of sauces. I find cavatappi adorable, and it's fun to create dishes with it. I love experimenting with recipes, making this pasta a delightful choice for my culinary creations.

Interestingly, cavatappi was created by accident, just like many classic and beloved dishes. Favorites such as chocolate chip cookies, Buffalo wings, and popsicles also originated from mistakes. This serves as a reminder that sometimes the best things come from unexpected situations.

I created this recipe to be adaptable so that it can pair well with a variety of sauces. My go-to options are typically tomato or cheese sauce, but I’ve included links to different sauces for those who enjoy experimenting. You can also add any veggies you like. For this recipe, I added broccoli. I used frozen broccoli because it’s so easy; in fact, most of the veggies I use are frozen veggies because it only takes just a few minutes to heat, and they’re perfect for quick meals that you want to have ready in less than 15 minutes.

To make this recipe, you’ll need some cavatappi. If you don’t have any cavatappi (they may not be available where you are, or maybe they’re no longer made), you can substitute any kind of pasta into this recipe. You’ll need 4 oz of cavatappi, a small pan with enough water to cook them in, and a little salt. In a small saucepan, add the water. Add in the salt and heat on medium-high heat until boiling. Add in your cavatappi and cook for about 6–7 minutes depending on how you like your pasta. If you like yours al dente, you’ll cook them in less time, around 5 minutes; if you like them softer like I do, then 6-7 minutes is ideal. Drain the water and place the pasta into a bowl. 

In another bowl you can add in the frozen broccoli; if you have a microwave, you can certainly use that, and it will only take 3 or so minutes depending on your microwave to cook. Alternatively, add the broccoli and the mixed vegetables; can’t forget the mixed vegetables; add a little water to steam, cover with a lid, and cook for 3-4 minutes until heated through and tender. Add the broccoli and mixed vegetables to the cavatappi. Add your favorite sauces and seasonings.

Ingredients 

4 oz Cavatappi gluten free pasta

1 tbsp nutritional yeast

1/4 tsp salt

1/2 cup broccoli

1/4 cup mixed vegetables

Directions 

Cook the cavatappi over medium-high heat for 6-7 minutes, or until tender.

Steam broccoli and mixed vegetables for about 3 minutes. Add cavatappi to a bowl. Add broccoli and vegetables on top of the cavatappi. Top with your favorite sauces.
